Place one layer of pine nuts, about 2 ounces, in a small dry skillet. Toast over very low heat until lightly browned, shaking frequently to prevent burning. They can burn in seconds. DO NOT LEAVE THEM UNATTENDED! Spread the toasted nuts on a counter top or platter to cool. Pine nuts have such a high fat content that they get rancid very quickly. Store them in the freezer in an air-tight container.
