COOKING TIP: Variations on Sweated Onions

If you like the taste of caramel, sweat the onions until translucent, raise the heat to medium-high, and sauté until the onions brown, stirring frequently. Add a tablespoon of butter for richness and/or dry sherry for nuttiness, plus any spices you like—curry or chili powder, roasted cumin, garam masala.

    this sounds like a perfect way to cook onions to decorate over rice/ pulav. i think this would also go well with this version of paneer tikka that i make.
