Another easy, stir together oil cake—and this one’s chocolate! SAM

1/3 cup salad oil
2 (1-ounce) squares unsweetened chocolate
1 egg, lightly beaten
1 1/4 cups all purpose flour
1 cup granulated sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla extract
3/4 cup water
1/2 cup semisweet chocolate morsels
1/2 cup coarsely chopped walnuts
Whipped cream

Preheat the oven to 350 degrees. Grease and flour a 9-inch square baking pan and set aside. In the top of a double boiler over simmering water, melt the chocolate. Remove from the heat and add the egg, flour, sugar, baking soda, salt, vanilla, and water. Beat with a fork until smooth and well blended. Spread the batter evenly in the prepared pan. Sprinkle a layer of chocolate over the top, then a layer of walnuts. Bake for 30 minutes or until a wooden pick inserted in the center comes out clean. Cool in the pan on a wire rack. Cut into 3-inch squares. Garnish with whipped cream or whipped topping.
Makes 9 servings.

emily, with all these chocolate posts, i made some brownies in the microwave on saturday night. they dont turn our crusty like the ones in the convection oven but are quite a hit for puddings. i drenched my serving in apple sauce and fresh cream :D.

    fudge cake also bookmarked.

    Hi Lakshmi,

Pudding brownies sound delicious. There’s an old French cake called a ‘moelleux chocolate,’ which means ‘half-baked chocolate.’ I’ve been trying for a year to find a recipe that’s as good as the moelleux in a tiny patisserie on the rue Montorgueil. How long did you cook your microwave brownies and at what speed?

Just one question – what is salad oil? Can I use sunflower oil instead?

    Hi Shammi,

Salad oil is any oil made from grain, nuts, or seeds. Sunflower oil is a salad oil, also safflower, corn, and peanut oil. Most salad oils have a more neutral flavor than olive oil. Many cooks prefer them in desserts or salad dressing. So, yes, you can use sunflower oil.

I wonder whether you really had 9 servings. Mine would have been far lesser 🙂

Yes, 9 servings is correct. The cake is very rich, although if you’re feeding people who really adore chocolate, they might want double slices.

Your posts are such fun to read. I enjoy the pictures too 🙂 It’s inspiring me to take more pictures of the food I make!

Thanks so much. I can’t take credit for the photos, though. Michael Underwood, a television director Emily works with, takes them. Go to Who We Are and click on his website. He’s a great still photographer.

I love to bake and it’s getting about that time of year (isn’t that what cooler weather and holidays are for?;-)!! Woo-hoo! Will definitely try this cake! Thanks!

Yes, cooler weather does call for baking. And this would make a great holiday cake. Thanks for commenting.
